Potatoes

Two warming winter soup recipes to keep the chill away

When it’s cold outside, there’s nothing more inviting than a hot bowl of soup. Here are two simple recipes that work for lunch, a light dinner, or a delicious first course at your next party. Either of these soups is great with toasted bread, especially something crusty and hearty like ciabatta or focaccia.One advantage to serving soup for a crowd is that most recipes can be adapted to be completely vegetarian or vegan, and the same is true for these.

Cannellini Bean and Sun-Dried Tomato Soup

For this recipe, you can use either homemade or store-bought pesto, depending on the time you have.

3 ¾ cups chicken or vegetable stock

two 14-oz cans cannellini beans, drained and rinsed

4 tbsp sun-dried tomato puree

5 tbsp pesto

black pepper (optional)

Parmesan cheese (optional)

 

1) In a pot, bring the stock and beans to a boil.

2) Reduce heat and stir in the tomato puree and pesto. Simmer gently for 5 minutes.

3) Carefully transfer about half the soup into a blender or food processor, making sure to get plenty of beans. Blend until smooth, and then return to pot.

4) Cook on low heat for another 5 minutes, stirring frequently.

5) Before serving, top each bowl with freshly ground pepper and a few shavings of good-quality Parmesan cheese, if desired.

Serves 4.

Spinach and Potato Soup

You can also substitute watercress or arugula in this recipe for a different flavour.

3 cups vegetable or chicken broth

4 medium-size potatoes, grated

1 cup milk

¾ cup chopped raw spinach

1 ½ tsp salt

¼ cup grated cheddar cheese (optional)

pinch of pepper

 

1) Bring the broth to a boil. Add grated potato and simmer for 10-15 minutes, stirring occasionally.

2) About 5 minutes before serving, add milk, spinach, salt and pepper.

3) Top with cheese right before serving, if desired.

Serves 4.

These snacks will appease your sweet tooth or your hankering for salt—and with less than 200 calories, they should be illegal

Want to give in to your cravings without feeling guilty about blowing your daily calorie intake? These eight snacks will crush your cravings and keep you satisfied.

On days when I’m feeling down, I find myself mostly craving chocolate. The comforting richness of milk chocolate can make any glass half full and give a positive outlook to life. When eating a whole chocolate bar just isn’t an option, try some of these sweet options on for size:

• 1 cup of strawberries with 1 tablespoon of melted semi-sweet chocolate chips:
By melting the chocolate chips in the microwave, it is possible to dip the strawberries into the chocolate, satisfying the craving and making you feel like you’re being pampered. This snack is approximately 120 calories and contains just 4 grams of fat, making it impossible to turn down.

• Irresistibles Frozen Yogurt Mini Bar in a Dark Chocolate Coating:
These 90 calorie frozen yogurt treats are found at most grocery stores (including Food Basics at Pape Avenue and Cosburn Avenue), and with only 5 grams of fat, they will have you begging for more. With a choice of chocolate, vanilla, or strawberry frozen yogurt, covered in a dark chocolate shell, these mini bars will quickly become a favourite for any snack or dessert.

• An apple with 1 tablespoon of peanut butter:
The creamy goodness of peanut butter will add an extra something special to the natural sweetness of the apple. This snack is around 170 calories, with 8 grams of fat, and will turn your regular fruit into a rich, creamy snack.

• Special K Fruit Crisps:
These bars, available with both strawberry and blueberry filling, are similar to Pop Tarts, but without the sugary icing and empty calories. One package of two bars is only 100 calories and contains 2 grams of fat. They can become a staple in any daily routine, curbing a voracious sweet tooth.

Some days I crave nothing more than salt, usually meaning bags of chips and lots of fat. Here are four snacks I have discovered to satisfy my salty desires:

• Pop Chips Sea Salt and Vinegar Chips:
These chips have finally made it to Canada and are a good substitution to the regular potato chip. This potato snack is popped instead of baked or fried, and for 28 chips contains only 170 calories and 5 grams of fat. For a person who cannot live without potato chips, this is the perfect alternative.

• Orville Redenbacher Smart Pop! Buttery Flavour Mini Bags:
These small bags of microwave popcorn taste much closer to movie theatre popcorn than any other kind of “smart popcorn.” With only 100 calories and 1 gram of fat per bag, there is nothing better for salty, buttery goodness.

• Pistachios:
These nuts will satisfy the craving for salt and have fewer calories than a lot of the more traditional nuts. Thirty-five pistachios contain approximately 133 calories, 11 grams of natural fats, and will offer a challenge by having you peel their shells. By concentrating on separating nut and shell, you will eat slower and will probably be full before you eat all 35 nuts.

• Quaker Crispy Minis:
When potato chips just aren’t an option, try these rice cake alternatives. With multiple flavours including butter popcorn, ketchup, salt and vinegar, and, my favourite, sweet chili, there are only about 90 calories and 3 grams of fat for 12 mini cakes.

These snacks are all relatively inexpensive and easy to find! Say goodbye to over-controlling cravings and hello to these smart, healthier alternatives.

A Taste of Summer Year-Round

These citrusy sandwiches will bring sunshine to your kitchen, despite the dreary winter

Are you sick of the winter blahs? If you’re anything like me, the constant cold and darkness leads me to cook simple, unimaginative dinners, so I can curl up on the couch with a good book sooner rather than later. However, I’ve recently come across a new recipe that reminds me of summer—a time when there was (more) sunshine in my life. This pineapple grilled chicken sandwich takes only minutes to make, and it brings variation to an otherwise dull dinner. To make one sandwich, here’s what you need:

  • 1 (6-ounce) skinless, boneless chicken breast (I used Jane’s frozen, pre-cooked carved chicken strips)
  • Cooking spray
  • Salt and pepper, to taste
  • 1 tsp fresh lime juice
  • 1 slice of pineapple
  • 1 whole wheat hamburger bun, toasted
  • 1 tbsp light mayonnaise

 

 

 

If you’re using chicken breast, make sure it’s thawed and seasoned with salt and pepper to your liking. Prepare a frying pan on a grill with some cooking spray and proceed to grill the chicken for 5 to 6 minutes on each side or until it’s done (meaning no pink juices leaking from the chicken), brushing occasionally with lime juice. If you’re using Jane’s pre-cooked chicken, it will take much less time to cook, but the idea is the same. Meanwhile, grill the pineapple slice for 2 to 3 minutes on each side, or until brown.

Finally, spread mayonnaise on one side of the toasted hamburger bun. Top each sandwich with 1 chicken breast (or 1 serving of chicken strips), 1 pineapple ring, and 1 bun top. The final result is a delicious citrusy sandwich that cures the winter blues in only minutes.

If you’re looking to spice up your sandwich even more, I would recommend cooking the chicken in barbecue sauce for a delicious salty-sweet combination, or even your favourite salad dressing, such as Caesar or Raspberry Vinaigrette. The possibilities are endless!

How To Host Your Own Oscar Party

What's a party without cake?

With the Oscar nominations finally announced, all of Hollywood is in a frenzy readying themselves for the golden night. You and I might not have a ticket to the event, but this doesn’t mean we have to miss out on all the fun.  Hosting your own decadent Oscar soiree can include all the glamour in more comfortable clothes.

Step One: Equipment

First things first, make sure you have a reliable television so the channel with the telecast comes in nice and clear. The worst thing that could happen is having everyone over trying to watch the awards through static. Also make sure the volume is turned up so you can hear what’s going on over your guests’ commentary on wardrobe.

Step Two: Ambiance

Once that is done, it is time to roll out the red carpet. Head to the closest fabric store or Value Village and get yourself some red fabric to lay out from the front door to the auditorium (a.k.a. your couch). Speaking of the auditorium, it should be decorated with 10’ Oscar replicas painted in real gold; or you could visit It’s My Party on the Danforth and pick up decorations from the Lights, Camera, Action section of the store. Nothing says a party like a giant Hollywood star.

Step Three: Cuisine

While the Hollywood types will be supping on caviar and champagne (if they sup at all; let’s admit, while fabulous, some of those girls could use a sandwich), our tastes are more refined. Hors d’oeuvres are best for night-long snacking. Try some Cream Cheese Jalapenos Pinwheels or Roasted Red Pepper Hummus with Pita Bread. Don’t forget dessert! Try fruit kebabs, which are so simple and everyone loves food on a stick. Of course we need cake, what is a party without a cake? Try your hand at creating your own Film Clapperboard cake or head to a bakery like Sweet Tooth to save yourself the clean up.

Step Four: The Ballot

As your guests arrive, hand them a ballot and ask them to make their predictions for all the major categories. At the end of the night, whoever gets the most right wins a prize, or at least the satisfaction of having superior taste in films.Download our ballot here: Unofficial Oscar Ballot

No matter what you serve or how your decorate, having an Oscar party can make that 4 hour ceremony much more enjoyable; and then you have a good excuse as to why you are late for work or school on Monday morning!

Cream Cheese Jalapeno Pinwheels

Mix one package of cream cheese with chopped jalapeno peppers (to taste). Spread that mix onto a rolled out tube of Pillsbury Crescent Rolls. Spread it evenly and roll back up into one long tube. Cut into ½” slices and lay out on a baking sheet for 7 minutes. Enjoy!

Roasted Red Pepper Hummus

In a food processor, mix 2 cans of chickpeas with one roasted red pepper. Add cayenne pepper, salt, and pepper to taste. Mix until smooth and serve with tortilla chips and pita bread.
