Tomato Parmesan Risotto

This dish is a classic. Warm and comforting, this tangy yet creamy side dish is a perfect compliment to any dinner. Make sure to serve it hot!



½ cup butter
1 large onion
4 ripe tomatoes
6 cups onion or chicken boulion
2 cups Risotto
½ cup white wine
½ cup shredded parmesan cheese
1 tbsp Basil



Heat a saucepan and a pot over medium heat. In the pot, melt half the butter and add onions. Cook until translucent.

In the saucepan melt the rest of the butter, then add the risotto. Allow to cook until toasted (slightly brown.)




Add the tomatoes and boulion to the pot. Bring to a boil.




Once the risotto is toasted, pour the tomato mixture over it. Add basil and white wine. Combine and let simmer for 20 minute, or until risotto is cooked to desired tenderness. Add parmesan cheese and stir. Serve immediately.
